Gluten Free Ameisenkuchen (Ant Cake)
This Recipe for Gluten Free Ameisenkuchen isn’t a new recipe by any means, but I always feel like it doesn’t get the attention it deserves. Imagine a super moist vanilla cake dotted with chocolate sprinkles - some say they look like tiny ants, while others think the cake’s crumb structure resembles an anthill when sliced. Either way, it’s a fun and nostalgic treat! To make it even better, it’s finished with a rich chocolate glaze and, of course, more chocolate sprinkles.
While my mom and grandma never baked this cake (at least not that I remember), it was a staple at birthday parties growing up. There was just something special about its simple yet irresistible combination of flavors - vanilla, chocolate, and that perfect balance of sweetness.

I love baking my quickbreads in an 8.4”x4.5”x4.1 Pullman Loaf Pan. A standard loaf pan will work as well but I highly recommend investing in a Pullman loaf pan if you bake a lot of loaf bread/cakes.

On a personal note
If you follow me on Instagram, you might have seen that I finally finished repainting and fixing up my office and the room where I do all my photography. It feels amazing to have a fresh, organized space.
With this being said, this is just the beginning of a few more home improvement projects I will tackle in the next several months. If you have ever painted an apartment by yourself (especially one of those very old Chicago Apartments that already has very uneven walls and probably 20 coats of paint underneath already on them) you know it’s a LOT of work. So if you are in the Chicago Area and want to trade a pan or two of brownies in return for hanging a few blinds and shelves, please let me know (I am kidding… kinda?).
So if I am not online 24/7 and don’t respond to dms/comments/emails within minutes, it’s probably because I am trying to figure out how to fix baseboards and use an electric drill…
