Gluten Free English Muffins
If you follow me on Instagram, you probably already know I’ve been working on a Small-Batch Gluten-Free English Muffin Recipe. Growing up in Austria, I never encountered these until moving to the U.S. And maybe to this day, they’re one of the few things not available in Austria (unless I keep missing them because I don’t look for them?).
Now, if you’re expecting a sweet treat, I hate to disappoint you. They aren’t muffins per se. English muffins are actually a type of small, round, flat bread that is typically toasted and served for breakfast. They have a soft, chewy interior with signature nooks and crannies, perfect for holding butter, jam, or other spreads.
Unlike regular bread, English muffins are cooked on a griddle or in a skillet before being baked in the oven, giving them a slightly crisp, golden exterior. They’re split in half with a fork (to maintain the nooks and crannies) before being toasted, making them ideal for breakfast sandwiches, like Eggs Benedict or a simple egg and cheese muffin.
The recipe on my website is made with the same ingredients I use in many other bread recipes and my gluten-free flour blends. So you should basically already have those ingredients in your pantry (in case you want to make some ASAP).
And while I mention this in the blog, I am going to mention it here again. Make sure to allow the dough to rest for 15 minutes before shaping the English Muffins. It has a higher hydration so if you would try to shape them right away, you will deal with a sticky mess. Also, I use super fine cornmeal to shape them. You can use potato starch as well but I like the texture the muffins get from the fine cornmeal. (If you can only fine coarse ground cornmeal, you can pulse it in a mixer or spice blender a few times until it has a finer texture)
I use Goya Fine Cornmeal in my kitchen, sold almost every grocery store, and never had any issues with the product. (Goya does have a Gluten Free List on their website. You can find it here: Goya Gluten Free Products, Cornmeal is on page 51, I use product 5100. Goya does not label their products as gluten-free). As with all products, make sure to check product labels.
