Gluten Free Lemon Poppy Seed Cake
There’s nothing like celebrating the first day of Spring with a slice of my Gluten Free Lemon Poppy Seed Cake. The bright, citrusy flavor paired with the delightful crunch of poppy seeds is the perfect way to welcome the season. Topped with a sweet-tangy lemon glaze, this cake is light, refreshing, and a true springtime treat. Whether you're enjoying it with a cup of tea or as a sweet dessert, it’s sure to put a smile on your face!
While I love a light and fluffy cake, I was craving something with a bit more substance and a denser texture. That’s where the melted butter comes into play. Mixing the melted butter with the sugar helps create a tender yet slightly dense crumb - exactly what I was looking for in a snack cake.
Make It Your Own
This recipe is super adaptable to your personal taste!
Not a fan of poppy seeds? Skip them and turn this into a delicious Lemon Snack Cake.
Prefer a Cream Cheese Frosting over a lemon glaze? My Small Batch Cream Cheese Frosting Recipe works beautifully - just add about 1 tablespoon of lemon juice and a touch of zest for extra citrus flavor.
Looking to swap up the citrus? Replace some of the lemon zest with orange or lime zest. Just keep in mind that too much orange zest can turn the cake bitter quickly.
Want to add more fruit? Gently fold in fresh or frozen blueberries for an extra burst of flavor!
