Gluten Free Chocolate Mug Cake
Every so often, mug cakes make a comeback. Those single-serving cakes, cooked right inside a mug in the microwave, seem to pop up in every corner of the internet every few years. And to be honest, I’ve been whipping up these quick and easy treats for as long as I can remember. There’s something undeniably satisfying about mixing together a few ingredients, microwaving for a minute or two, and digging into a warm, gooey dessert.
For me, a chocolate mug cake is the ultimate comfort treat. It’s like having a slice of chocolate cake without the hassle of baking an entire batch. No preheating the oven, no dirty mixing bowls piling up in the sink - just a single mug, a spoon, and a craving satisfied in minutes. It’s a great recipe on hand if you don’t have access to an oven like traveling in an RV, staying at a hotel or being a college student with just a small dorm kitchen.
So I finally added my Gluten Free Chocolate Mug Cake to my website. After all, everyone deserves a quick and delicious dessert. I love it with just a dusting of powdered sugar or if I happen to have some on hand, a generous dollop of whipped cream and some sprinkles. Want to add peanut butter? Swirl it in before microwaving. Craving a little crunch? Toss in some chocolate chips or chopped nuts. Feeling extra indulgent? A scoop of ice cream on top takes it to another level.
Mug cakes are proof that baking doesn’t have to be complicated to be delicious. They’re an easy way to treat yourself, whether it’s a late-night craving or a mid-afternoon pick-me-up. And with this solid gluten-free version, everyone can enjoy a warm, fudgy bite of happiness in under five minutes.
Keep in mind that microwaves, just like ovens, can vary from model to model. Mine is a bit of an ancient 950-watt model from 2007 (but still works like a charm). So you may have to play with the “baking times” a bit. When in doubt, slightly undercook the cake rather than overcook it, as mug cakes can go from perfect to rubbery in just 15 seconds. And no one likes a dry, rubbery chocolate cake.
