I’m unofficially calling this past week my Spring Break - not because I was lounging on a beach, but because I only turned on my oven once. And even then, it was to roast some carrots and chickpeas for dinner (not exactly recipe testing material).
If you follow me on Instagram, you already know most of my week was spent painting (and cleaning) and trying to shake off a cold I did not sign up for. Not that anyone asks for a cold, but still. But my bedroom is finally painted, the dresser I ordered is assembled and hopefully by midweek next week my apartment will look more like a home again than a random storage unit with furniture and stuff all over the place. I haven’t told Frankie yet that the bed will not stay in my living room forever….
Yesterday, I finally started working on a new recipe - only for the grocery store to completely throw me off with their blueberry prices. I considered just making a plain version, but I didn’t love how it turned out. So today, I’m venturing out again in search of blueberries that won’t require a small loan.
Do I feel guilty for not having a new recipe for you today? A little bit.
But I also know that 98% of you understand that some weeks are just like that. And hey - it’s not like there aren’t plenty of recipes on my website for you to make in the meantime.
What to bake this week
Tomorrow is National Coffee Cake Day and if you know me, you know I LOVE a good coffee cake and there are several coffee cake recipes on my website.
Gluten Free Carrot Cake Coffee Cake: This coffee cake is perfect for Easter brunch, but honestly, I think carrot cake deserves a spot at the table year-round. This one’s packed with finely grated carrots, warm spices, and all the cozy vibes. It’s moist, tender and has a buttery walnut streusel on top that really seals the deal. Whether you’re having it for breakfast, brunch or just need a little something sweet with your afternoon coffee, this cake’s a total winner.
Gluten Free Rhubarb Coffee Cake: If you already have rhubarb growing in your backyard, this coffee cake is must make. Picture this: a tender, gluten-free vanilla cake topped with juicy, tangy rhubarb and finished with a generous layer of sweet, crunchy streusel. The tart rhubarb paired with the buttery, sugary topping? Absolute perfection. There is also a smaller blueberry version of this cake on the website.
Gluten Free Apple Crumb Cake: Good thing Apples are always in season. A tender, buttery cake base is topped with spiced apples and finished with a generous layer of sweet, crunchy crumb topping. Perfect for breakfast, brunch, or an afternoon pick-me-up, it’s the kind of cake that’s hard to stop at just one slice.

Before I let you go and go on with your Sunday Plans, I want to thank everyone who not only offered input about what color headboard I should get for my bedroom but also send suggestions for a liver supplement for my senior puppy Feather. Very much appreciated!
Wishing you a relaxing Sunday and Happy Baking!
