Gluten Free Cranberry Walnut Bread
Friends have told me about the “famous” Costco Cranberry Walnut Bread for a while now. And mentioned over and over HOW good it is. So clearly I was intrigued and knew I needed to make some. I tinkered with this recipe on and off for a few months now. Every so often I would make a loaf and while I thought it was good it didn’t blow me away.
Until one day, on a run, I had this idea to candy the walnuts (coat them in a thin layer of cinnamon sugar, similar to my Candied Almonds). BINGO! That’s exactly what the bread needed. Yeast can be funny when you act cinnamon to the actual dough (cinnamon reduces the growth of yeast) but there were no issues with the cinnamon sugar coating. It would melt into the dough during baking making the bread flavorful and lightly sweet. Perfection if you ask me!
My Gluten Free Cranberry Walnut Bread is a great addition to any holiday table. Serve it toasted with bread or cream cheese for breakfast, a charcuterie board (it pairs so well with cheese) or use it to make the best Thanksgiving Leftover Sandwich ever. I can see this used to make a panini style sandwich with melted brie, cranberry sauce and maybe a slice or two of turkey….
