Friends, it’s officially Fall but before I start getting excited about all the apple and pumpkin recipes on my website, I thought today would be a fun opportunity to talk about the Best of Summer 2024. And don’t worry, these are recipes you can make all year ago.
The biggest hit of Summer 2024 were my Gluten Free Blueberry Streusel Cookies and I don’t blame you. They are a delightful cross between a gluten-free tart and a cookie, featuring a buttery almond shortbread crust, juicy blueberries, and a delicious streusel topping. Baked in a muffin tin, these no-chill cookies come together in just 30 minutes. And second close was my Aunt’s Gluten Free Rhubarb Coffee Cake (Rhabarber Streuselkuchen). And yes, you can replace the rhubarb with other fruit. I recently made it with some cinnamon-tossed apple pieces and it was delicious. And let’s not forget the Gluten Free Fluffernutter Rice Krispie Treats. A delicious twist on the classic rice krispie treats, inspired by the famous Fluffernutter sandwich. And they are the perfect Football Sunday Snack if you ask me.
My favorite recipe of Summer 2024 was my Gluten Free Breakfast Cake. Not just because I fully support cake for breakfast but also because it comes together in no time. It’s also a great family-style dessert. Just serve it still warm from the skillet with a generous dollop of whipped cream or ice cream.
Biggest flop of Summer 2024? The popsicle recipes… guess Frankie and I were the only ones excited about them. Not every recipe can break the internet, I guess ;)
What’s happening in my kitchen
I am finally done testing a new, one-bowl snack cake recipe and hopefully will get that one online in the next few days. I also tested another gluten free 100% sourdough bread recipe and let’s just say I finally baked the worst Gluten Free Bread I ever baked. I am also skimming through some old recipes I need to desperately update - there is nothing wrong with them but they could REALLY use some new photos (looking at you Gluten Free Apple Cheesecake Bars).
