Gluten Free Air Fryer Lava Cakes
It all started a few days ago when someone casually mentioned lava cakes on a random TV show - and suddenly, I was hit with a wave of chocolate nostalgia. I couldn't even remember the last time I'd seen a lava cake, let alone made one. But I do remember when they were absolutely everywhere. Every restaurant had their own version - from fancy steakhouses to Chili’s - and don’t even get me started on the boxed ones at Costco that came in a 6-pack of regret and delight.
Lava cakes (aka molten chocolate cakes) are personal-sized chocolate cakes with a soft, fluffy exterior and a decadent, gooey center that oozes out when you dig in - like a sweet little volcano that erupts pure joy. And yes, chocolate is non-negotiable. So no, this cannot be made “without the chocolate.” That would be a muffin. Or sadness. More likely sadness.
The air fryer is lava cake’s best friend. It preheats in a few minutes, cooks them fast, and gives you that perfectly set outer shell with a gooey center - without turning your kitchen into a sauna. Plus, it’s ideal for small batches, so you can make a fancy-feeling dessert on a weeknight without committing to an entire tray of temptation. And it’s totally okay if you eat both. They are small, you were hungry and you can tell people someone had to do quality control.
I use an Instant Pot Vortex 6 quart Air Fryer these days. It’s new to me since I gave away my larger Air Fryer to a friend a few weeks ago and then realized my 2-quart air fryer was actually too small to even hold two ramekins. Facebook Marketplace to the rescue (It was $5… and I am not allowed to give it away HAHA)
