About a year ago, or so, I started messing with Gluten Free Ciabatta Rolls and just couldn't get them right. The crumb was dense, the flavor flat, and no matter what I tried, they just didn’t have that signature ciabatta vibe. So, after a few too many disappointing batches, I benched the idea and moved on. I told myself, maybe ciabatta just isn’t meant to be gluten-free.
A few days ago, I stumbled across my old notes and had a moment: “You are seriously overthinking this.” Ciabatta is supposed to be simple - just a handful of ingredients, no fancy tools, no stress. And honestly? I knew I could figure it out if I just got out of my own way.
And guess what? I did.
Happy to share Gluten Free Ciabatta is new on the website. It’s light, airy, and has that signature open crumb and chewy texture you'd expect from a classic ciabatta. The crust bakes up beautifully crisp and golden, with a rustic, artisan-style look that makes it look like something straight from a bakery.
This recipe makes 4 good-sized ciabatta rolls. Yes, you can double the recipe, but as always, I recommend making it as written first and then doubling it the next time.
I can’t wait for local tomato season to start because these rolls will 1000% make the best BLTs and Caprese Sandwiches EVER! (Good thing I planted all that basil)
I use Caputo Fioreglut for this recipe. As mentioned before, I found the best price for this flour is via Brickovenbaker.com (they often have coupons, free shipping over $35 and if you use a lot of Caputo, the 4 pack is the best deal!)
