Gluten Free Graham Crackers
If you had told me years ago that I’d one day be obsessing over the perfect gluten free graham cracker, I probably would have laughed and told you to just buy some at the store. But here we are - Gluten Free Graham Crackers are new on the website.
Graham crackers are one of those snacks that seem simple until you try to make them yourself. A little sweet, a little toasty, a little nostalgic - somewhere between a cookie and a cracker. They hold up to s’mores, make the best cheesecake crust, and, let’s be honest, sometimes just need to be eaten straight from the box (or, in our case, straight from the cooling rack).
Let’s talk about what a graham cracker actually is. Originally, these humble crackers were part of a 19th-century health movement spearheaded by Sylvester Graham, who believed a bland, whole-grain diet would keep people virtuous. (He clearly never experienced the joy of a s’more.) His original graham crackers were simple, unsweetened, and made with coarsely ground wheat flour - far from the honey-kissed, cinnamon-dusted version we know today.
For those of us in the gluten-free world, recreating that perfect graham cracker experience is… a bit of a puzzle. Espeically since there is no gluten free substitute for Graham Flour (a very coarse ground wheat flour) BUT a mix of almond flour (for flavor and texture) and a gluten free flour blend (like King Arthur Measure for Measure) gets you surprisingly close to the real deal. Add a little honey, cinnamon, and just enough butter (or a dairy-free alternative) to keep things tender but not too soft, and you’ve got something magical.
Then comes the baking. Too thick, and they’re more like cookies and won’t have that typical graham cracker snap. Too thin, and they overbake quickly. And believe me, a burned graham cracker is NOT a good graham cracker. But when you nail it? Oh, that first snap when you break one in half is pure satisfaction.
Of course, the best part of making your own graham crackers is what you do with them. There’s the obvious (s’mores, cheesecake crusts, dipping them in tea like a responsible adult). But then there are delicious ideas like using them to make Gluten Free S’mores Rice Krispie Treats, Gluten Free S’mores Cookies or sandwiching them with peanut butter and a sprinkle of flaky salt for the ultimate snack (my favorite especially for a pre run snack!)
