Gluten Free Kaiserschmarrn
If you’re anything like me, sometimes you need a little comfort food to brighten your week. And when that craving hits, Gluten Free Kaiserschmarrn is one of my absolute go-to’s (and it only calls for 2 eggs. So there is that).
There’s just something so cozy about those fluffy, torn pancakes, caramelized in butter and dusted with powdered sugar.
And if raisins aren’t your thing (I know they aren’t everyone’s favorite!), don’t worry - you can easily turn this into “Apfelschmarrn.” Just dice up a small apple, sauté it in a bit of butter, and pour the gluten-free batter right over it. Apfelschmarrn is especially popular in Tyrol, where I grew up, though it’s less common in other parts of Austria. Either way, it’s a plate of pure comfort you can enjoy any time of day..
Unlike American pancakes, Kaiser Schmarrn is not typically something Austrians eat for breakfast. It is a popular choice for lunch or dinner though, particularly after an active day in the mountains. It is typically served family style and eaten straight from the skillet it was cooked in.
