Gluten Free Mini Cheesecakes
If you’re craving a dessert that looks impressive but is super easy to make, these Gluten Free Mini Cheesecakes won’t disappoint. They’re creamy, rich, and just the right amount of fancy - without any fuss. Plus, anything in mini form is just more fun, don’t you think?
For the crust, I keep it simple with a homemade shortbread base. But if you’re feeling extra ambitious, you can start with some Gluten Free Graham Crackers and make your own graham cracker crust for a more traditional flavor.
Now for the topping: here’s where it gets REALLY good - roasted strawberries. If you’ve never tried roasting strawberries before, you’re in for a treat. Sure, fresh strawberries are great in season, but let’s be honest - sometimes they just don’t hit the mark. If you’re in the Midwest like me, you know exactly what I mean. But roasting them in the oven for just 30 minutes brings out all that natural sweetness and flavor we love, making them the perfect topping for these cheesecakes. (If you already have some rhubarb on hand, you could also make some Roasted Strawberries and Rhubarb Compote)
