Gluten Free Pumpkin Cream Cheese Muffins
Okay, I said I was done with pumpkin for the year but then I opened my cupboards and there were the ingredients I bought weeks earlier to make Gluten Free Pumpkin Cream Cheese Muffins. So here we are, Pumpkin Cream Cheese Muffins are new on the website. A perfectly spiced pumpkin cake filled with a delicious cream cheese filling and topped with a pumpkin seed streusel. They are kinda like the ones they sell at Starbucks (but gluten free and without the hefty price tag. ).
Just like my Gluten Free Blueberry Muffins (and several other Gluten Free Muffin Recipes) the recipe starts with cold ingredients. Blending the COLD butter with the dry ingredients will produce a tender crumb and give the muffins a high dome. Also, it will reduce the risk of air bubbles and "tunnels" in your muffins. And yes, you will see some little bits and pieces of butter in the pumpkin muffin batter but believe me, it’s going to be fine once they are baked.
What I love about these muffins is that you can prepare them ahead of time (I recommend arranging them in the muffin pan and covering them with some plastic) and refrigerate them for up to 48 hours. Nothing like freshly baked muffins for the Holiday Weekend!

Gluten Free Pumpkin Cheesecake Bars: Not a fan of pie? Then THIS is the perfect pumpkin dessert for you. It’s easy to make and always a crowd pleaser! The perfect dessert for a fall get-together (and they are actually better the next day - great make-ahead dessert!). I always bake them 1-2 days in advance and keep them in the fridge covered and undecorated.
Gluten Free Soft Dinner Rolls: These Gluten Free Dinner Rolls have been the number one Thanksgiving Recipe on my website for several years now. And I don’t blame you. They are perfect. And easy to make.
Cinnamon Spiced Pecans: They make a fabulous addition to salads, a sweet snack, charcuterie boards, and even desserts. And of course, Cinnamon Roasted Pecans are also perfect for Holiday or Hostess gifts. Wrap them up in a cute mason jar or little bags, tie them with a bow and you are good to go.
An Update on Cup4Cup Gluten Free Flour
I always try to be honest with my readers and share if something does not work or is not up to my standards. Please keep in mind Food Bloggers do NOT control when companies change recipes or feel the need to “upgrade” a product. I spent years perfecting recipes and now feel like I have to do “damage control” to protect my business and don’t lose the trust of my readers.
A quick backstory: Cup4Cup announced in Spring 2024 to become “Top 9 Allergen Free” meaning they are removing the milk powder from the Gluten Free Multipurpose Flour and all other blends that may contain dairy. The communication with customers are very “wishy-washy washy” and there wasn’t much information provided aside from “the flour mixture stays the same, just no more milk powder”. Well, let’s just say they did more than just remove the dairy from the flour blend because food bloggers left and right are re-testing recipes and dealing with upset readers.
I recently received 2 bags of the new blend directly from Cup4Cup and I am NOT in love with it. I am giving it the benefit of the doubt since the flour smells very, very off (and leaves a strange aftertaste). I already e-mailed Cup4Cup but since communication with them is very, very slow and again, wishy-washy, I don’t expect an answer from them anytime soon or at least before Thanksgiving.
With this being said, Katie over at Wheat By the Wayside has created a Cup4Cup Copycat Recipe. If you use my gluten free flour blend you most likely already have all the ingredients at home. Except for the White Rice Flour (Since I use Sweet Rice Flour which is NOT the same as White Rice Flour). Make sure to use superfine flours! You can often find white rice flour at Asian markets.
If you have some of the original blend of Cup4Cup in your pantry you are very lucky!
I understand how frustrating this is for many of you. And believe me, I am just as frustrated and disappointed as you. I very much encourage customers to leave reviews wherever they purchase the new flour blend and express their feelings. And of course, stop purchasing the product because a decline in sales will maybe get Cup4Cup’s attention….
